
I love Mexican food. Tacos especially. To the extent that my husband, Jason, included with his wedding vows the promise to make me tacos at least once a week. I suspect we’ve missed a week here or there, but we definitely eat them a lot. This week, for example, I ate tacos for dinner on Tuesday, huevos rancheros for dinner on Monday (as well as for brunch on Sunday). And for lunch today, I’ve packed myself a simple burrito.
There are also currently two and a half ripe avocados at home in the fridge, and I mean, we’ll have to eat them on something. It might as well be tacos.
In honor of my deep love of rice, beans, tortillas, cilantro, and the rest of it, here is my latest pattern:
